I hired a farmer friend of mine, Tim Wightman from the Farm to Consumer Foundation (he is also in the movie Farmageddon), to help me source nutrient dense food for the restaurant. When we first talked about my plans for a restaurant, he expressed concerns that it would be hard for me to find a constant source of the right foods in the area. He knew that many of the farmers were tapped out. So…we went looking for some farmland with the idea of starting our own farm.
We found one. It is on Clough Road (my maiden name is Clough…so it was meant to be right?) in Bath, NH. The name is currently Hilltop Farm but we are thinking about changing that, too, so that it is not confused with a restaurant of the same name.
We plan to raise steer, pigs, lamb, chickens and turkey on the farm. We also hope that we will be able to offer outreach and be a place where pastured farming practices can be shared among all interested farmers. Tim is a great teacher and he is eager to document the progress of the farm and to get an educational program underway.
We also hired an assistant farmer, Amber Reed. Amber has 10 years of experience farming and we are excited to have her on board. Stay tuned for pictures, videos and blog posts on our progress!
